Happy Valentine’s Day! I hope that you all have fun plans & maybe get to eat chocolate dessert! If you need a quick, easy but decadent dessert I have one for you –Chocolate Pot de Crème (fancy chocolate pudding). Your Valentine will swoon for this one for sure! I am posting a very special BBQ Sauce that you will love to slather on ribs or pulled pork tomorrow so check back for that!

What have you been cooking lately [FIRST NAME GOES HERE]? Have you been eating in or out more? We have been eating in but to be fair, we are in a fairly restaurant desert here in Jasper. We are planning to drive to Nacogdoches soon where there’s a ,craft brewery & a few restaurants… but that’s it here in east Texas so, yea, eating in.

That means I have been cooking a lot; mostly soups & salads but we also got an air fryer! Yes … I caved! I have been waffling on whether I wanted to sell my Instant Pot & get the new Ninja Foodi because it’s a combo product, but I did the math & decided to keep my pressure cooker & add an air fryer. I bought the Ninja air fryer & it also dehydrates so looking forward to that. WE have cooked chicken wings, homemade egg rolls & potatoes in it. ALL were a great success & NO OIL! WOO-HOO!!

I am also fully immersed in all thing “cookbook writing” & it is exhilarating! I think you know you are meant to do something when it consumes & exhilarates you all at once. I am excited to be able to start sharing some details in the coming months. I also plan to bring you into the project as well so watch for an announcement this summer on that. In doing research I am also becoming more educated on the true state of the American farmer. Some of it I knew, some of it is new — & shocking. I wrote a post about it this week if you wish to read it – Can we Save the American Farmer?

For now,  I would truly love to know what the name of your favorite cookbook is? Why? How many do you have on the road (or will you take if you are not on the road yet) or how many do you have in your collection if you live in a house?

I would love you to drop me a line & let me know what you would want in a cookbook that would be worthy of taking to the road with?

Until next week my friends!
